Soybean oil itself is a complex mixture and some of its individual components can exist as isomers. In its raw state it contains many cis-isomers of unsaturated fatty acids. Whereas the processed oil may also contain trans-isomers due to hydrogenation. |

The production of soybean oil begins with cleaning and dehulling harvested soybeans to remove impurities and outer shells. The cleaned beans are then cracked, heated, and flaked to rupture the cells and facilitate oil extraction. The flakes undergo mechanical pressing or solvent extraction, typically using hexane, to separate the oil from the meal. The crude oil is then refined through degumming, neutralization, bleaching, and deodorization to remove free fatty acids, pigments, and odours. |

The carbon footprint of refined soybean oil has been estimated at between 1.5 and 3.0 kg CO₂e per kg of oil. |
