Anethole, a component of star anise oil, is isomeric and exhibits geometrical (cis-trans) isomerism due to the presence of a carbon–carbon double bond in its structure. The most common and naturally occurring form is trans-anethole. In contrast, cis-anethole is less stable and can be formed through isomerisation under heat or UV light. |

Commercial production of star anise oil involves cultivating the Illicium verum plant, primarily for its aromatic fruit and leaves. The oil is extracted through steam distillation, typically using either the fruit or mature branches and leaves, which are harvested and processed in specialised distillation units. Traditional methods like direct fire heating in single-pot distillation are still common, especially among small-scale producers, though they tend to have lower efficiency and higher fuel consumption. |

Data for specific plant oils is scarce. However, from publicly available data the carbon footprint of plant oils has been estimated at between 1.0 and 4.0 kg CO₂e per kg of oil. This depends on the plant oil content, agricultural practices and processing methods used. |
